Creamy Mushroom & Turkey Pasta

Ground turkey simmered with caramelized onions and mushrooms in vegetable broth with garlic, Swiss cheese, and heavy cream. Tossed with fettuccine noodles and finished with freshly grated Parmesan cheese.

Ingredients

  • 1.25 lb ground turkey
  • 2 tablespoons vegetable oil
  • 1 cup sliced yellow onions
  • 1 (8oz) container sliced mushrooms
  • 1 tablespoon freshly minced garlic
  • 1 tablespoon kosher salt
  • 1 teaspoon garlic powder
  • ½ (16oz) box fettuccine pasta, cooked
  • ½ cup vegetable broth
  • ½ cup heavy cream
  • ½ cup pasta water
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 2 cups shredded Swiss cheese
  • 1 cup Parmesan cheese
  • Step 1

    Heat oil in a large skillet over medium heat. Sweat the onions, mushrooms, and garlic for 5 minutes or until tender. Add in the turkey and season with salt and garlic powder. Cook for 10 minutes and stir in the broth and cream and continue cooking 5 minutes.
  • Step 2

    While cooking the turkey and sauce, combine the butter, flour, and Swiss cheese together. Stir the cheese mixture into the skillet after the cooking time. Continue stirring until the sauce has thicken.
  • Step 3

    Toss with the cooked pasta and serve with the Parmesan cheese.
