Ground Turkey Meatballs with Pasta and Parmesan Pepper Sauce

Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 1/2 cup Italian breadcrumbs
  • 2 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 red bell pepper
  • 1 orange or yellow bell pepper
  • 1/2 cup cashews
  • 1/2 cup shredded parmesan
  • Pinch of chili flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup ricotta cheese
  • 1/2 cup tomatoes
  • 1/4 cup of 2% milk
  • 16 oz of pasta of your choice (spaghetti or angel hair work great for this!)

  • Step 1

    Preheat the oven to 350 degrees Fahrenheit.
  • Step 2

    Prep the pasta according to the package while you start the rest of the meal.
  • Step 3

    In a mixing bowl combine the ground turkey, egg, breadcrumbs, garlic, salt and pepper. Mix well and form into meatballs using a 2 tbsp cookie scoop.
  • Step 4

    In an oven safe skillet over medium high heat, sear the meatballs on each side for about 1 minute on each side.

    Place the skillet in the oven to finish cooking the meatballs. About 15 more minutes or until the internal temperature reaches 165 degrees fahrenheit.
  • Step 6

    To make the sauce, start by heating some olive oil in a cast iron skillet over medium high heat.
  • Step 7

    Take your bell peppers and char each side approx 3-4 minutes each side. The skin should start to blister!
  • Step 8

    When the peppers are mostly tender (after 10 minutes or so) place them in a food processor with the cashews, parmesan, ricotta, chili flakes, salt, pepper, and diced tomatoes.
  • Step 9

    Pulse until everything becomes finely chopped. Start to stream in the milk and blend until the sauce becomes smooth
  • Step 10

    When the meatballs are done, remove the skillet from the oven and pour the parmesan pepper sauce over the meatballs.
  • Step 11

    When the pasta is finished, plate some in a bowl or serving dish and top with the parmesan pepper meatballs. Enjoy!
