Leftover Turkey Sandwich

Ingredients
- 4 cups thick sliced (or shredded) leftover Fresh or Frozen Whole Turkey
- 8 slices sourdough bread
- 4 oz. brie cheese (substitute with any cheese you have left over)
- 1 cup spinach
- ¼ cup mayo
- ¼ cup Dijon mustard
- ¼ cup cranberry sauce
- 1 tbsp. olive oil
- 1 tbsp. Italian herbs
- 8 round slices leftover sweet potato or butternut squash

Step 1
Pre-heat the oven to 400°F. -
Step 2
Add the slices of sourdough to a baking sheet and drizzle the bread with olive oil and sprinkle on the Italian herbs. -
Step 3
Toast in the oven for 3-5 minutes until nicely browned. Set aside. -
Step 4
In a small bowl, whisk the mayo and Dijon mustard. -
Step 5
Layer the sandwich starting with brie, sliced sweet potato, spinach, cranberry sauce, turkey, and finally top with the Dijon mayo. -
Step 6
Top the sandwich with the other slice of bread and return to the oven for 3-5 minutes until the brie is melting out of the sides. -
Step 7
Slice down the middle and enjoy!
