Ingredients
Roasted Turkey Breast Tenderloins
- 1 package Turkey Breast Tenderloins
- 2 tbsp. olive oil
- 1/2 tsp. lemon pepper
- 1/2 tsp. dried oregano
- 1/2 tsp. chili powder
- Kosher salt, to taste
- Lemon slices, to taste
Avocado Spinach Sauce
- 2 ripe avocados
- Handful of baby spinach
- Handful cilantro
- 1/2 cup reduced-fat sour cream
- 1 or 2 jalapeños
- 1 garlic clove
- 1/2 tsp. salt
Tostadas And Toppings
- Pre-packaged tostada flats
- 1 can refried black beans
- 1 tomato, chopped
- Shredded lettuce, to taste
- Roasted sweet potatoes, to taste

Preheat oven to 375°F. -

In a small bowl combine lemon pepper, oregano, and chili powder. -

Drizzle each turkey tenderloin with one tablespoon of olive oil and then season generously with spice mixture and salt. -
Step 4
Arrange the seasoned turkey tenderloin on an aluminum foil lined baking sheet with place lemon slices, as desired. -
Step 5
Roast for 40 minutes lightly covered with aluminum foil. -
Step 6
Roast for an additional 15-20 minutes uncovered until the meat reaches an internal temperature of 165°F using a meat thermometer. -
Step 7
Allow the turkey tenderloins to rest for 10 minutes. Use a sharp knife to slice and chop the tenderloins into 1/2-inch cubes.
