Turkey Chipotle Sliders

- 2 pounds Ground Turkey
- 1 tablespoon olive oil
- 1 package chipotle taco seasoning
- 12 slices provolone cheese, about 8 ounces
- 12 King’s Hawaiian buns
- 3 ounces fresh watercress
- Chipotle Mayo
- 1 ½ cups mayonnaise
- ½ cup crema, also known as Mexican Table Cream
- ¼ cup honey
- ½ cup chopped cilantro
- 2 tablespoons lime juice
- 3 to 4 chipotles with the adobo
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Step 1Heat grill to medium-high heat or prepare a charcoal grill for direct heat.
Step 2Coat a large baking sheet with non-stick spray. Combine the turkey, taco seasoning, and olive in a large bowl, use clean hands to combine. Divide the turkey into 12 balls a little bigger than a ping-pong ball, about 2 ½ ounces each. Flatten each ball into a patty on the baking sheet. Use a clean kitchen towel to brush the grill grates with olive oil just before grilling.
Step 3Grill the turkey patties for 4 minutes, and then flip and continue to cook the other side for another 2 minutes. Add a slice of provolone to each burger and close the grill for 1 minute while the cheese melts.
Step 4Remove the burgers to a clean plate and toast the buns for 1 minute on the hot grill. Put each patty on a hawaiian bun, top with the chipotle mayo and the watercress just before serving.
Step 5For the Chipotle Mayo, combine the mayo, cream, honey, cilantro, lime juice, and chipotles in the bowl of a food processor and pulse to combine.
Step 6Season with salt and pepper and store in an airtight container in the fridge until ready to use, up to 5 days in advance.
