Turkey Sweet Potato Hash Skillet

Ingredients
- 1 package Turkey Breast Cutlets or 1 package Ground Turkey
- 2 sweet potatoes
- 1 medium onion
- 2 tbsp. olive oil
- Salt
- Freshly ground pepper
- 1/2 tsp. dried thyme
- 2-3 poached eggs
- 1/4 cup chopped fresh parsley, optional

Step 1
Peel sweet potatoes and onion and dice into 1/2 inch pieces. -
Step 2
Heat a large skillet over medium-high heat and add olive oil. -
Step 3
Add sweet potatoes and onions to the skillet with oil and season with a pinch of salt. -
Step 4
Cook, stirring from time to time for 5 minutes, until onions begin to turn golden brown and potatoes soften. -
Step 5
Add turkey breast strips and season with another pinch of salt, ground pepper and dried thyme. Continue to cook, stirring until the turkey is cooked to 165°F and brown on the edges, about 4-5 minutes. -
Step 6
Garnish with parsley and top with poached eggs.
