    Peel sweet potatoes and onion and dice into 1/2 inch pieces.
  • Step 2

    Heat a large skillet over medium-high heat and add olive oil.
  • Step 3

    Add sweet potatoes and onions to the skillet with oil and season with a pinch of salt.
  • Step 4

    Cook, stirring from time to time for 5 minutes, until onions begin to turn golden brown and potatoes soften.
  • Step 5

    Add turkey breast strips and season with another pinch of salt, ground pepper and dried thyme. Continue to cook, stirring until the turkey is cooked to 165°F and brown on the edges, about 4-5 minutes.
  • Step 6

    Garnish with parsley and top with poached eggs.
