Apple Cider Glazed Turkey Breast

Ingredients

  • 1/2 cup apple cider
  • 1/2 cup white wine vinegar
  • 2 tablespoons Truvia calorie-free sweetener
  • 2 tablespoons grainy mustard
  • 1 Fresh Bone-In Turkey Breast (about 4 lbs)
  • 1/4 cup melted butter
  • 1 tablespoon finely chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 teaspoon each, salt and pepper

  • Step 1

    In saucepan, combine apple cider vinegar, Truvia sweetener, and mustard; bring to boil over medium-high heat. Cook for 10-12 minutes or until reduced by half.

    Meanwhile, preheat oven to 450°F. Pat turkey breast dry with paper towel. Stir together butter, thyme, garlic, salt and pepper; rub all over turkey, including under the skin.
  • Step 3

    Place turkey on rack in roasting pan; roast for 40 minutes. Reduce heat to 400°F; roast, basting with apple cider glaze for about 30 minutes or until thermometer inserted into thickest part of the breast reaches 165°F. If turkey browns too quickly, cover loosely with foil. Slice turkey and serve. Delicious with cranberry sauce! Substitute rosemary or marjoram for thyme, if desired.
