Apple Cider Glazed Turkey Breast

Ingredients
- 1/2 cup apple cider
- 1/2 cup white wine vinegar
- 2 tablespoons Truvia calorie-free sweetener
- 2 tablespoons grainy mustard
- 1 Fresh Bone-In Turkey Breast (about 4 lbs)
- 1/4 cup melted butter
- 1 tablespoon finely chopped fresh thyme
- 2 cloves garlic, minced
- 1 teaspoon each, salt and pepper

Step 1
In saucepan, combine apple cider vinegar, Truvia sweetener, and mustard; bring to boil over medium-high heat. Cook for 10-12 minutes or until reduced by half. -
Step 2
Meanwhile, preheat oven to 450°F. Pat turkey breast dry with paper towel. Stir together butter, thyme, garlic, salt and pepper; rub all over turkey, including under the skin. -
Step 3
Place turkey on rack in roasting pan; roast for 40 minutes. Reduce heat to 400°F; roast, basting with apple cider glaze for about 30 minutes or until thermometer inserted into thickest part of the breast reaches 165°F. If turkey browns too quickly, cover loosely with foil. Slice turkey and serve. Delicious with cranberry sauce! Substitute rosemary or marjoram for thyme, if desired.
