Easy Orange Turkey Stir Fry

This delicious Asian-inspired stir-fry by Mary’s Whole Life is an easy, 30-minute meal perfect for busy weeknights. It’s packed with juicy turkey tenderloin and fresh veggies tossed in a tangy gluten-free orange teriyaki sauce. Serve over rice topped with green onions, and your taste buds will be singing!

Ingredients

Stir-Fry Sauce

  • 3/4 cup freshly squeezed orange juice
  • 2 cloves garlic, minced
  • 2 tbsp hot honey, or regular honey
  • 3 tbsp coconut aminos
  • 2 tsp rice vinegar
  • 1 tsp freshly grated ginger
  • 1 tbsp arrowroot powder, or cornstarch
  • Zest from 1/2 an orange

  • Step 1

    Combine all of the stir-fry sauce ingredients in a bowl and whisk well to combine. Set aside.
  • Step 2

    Heat 1 tbsp of the sesame oil in a large skillet over medium high heat. Add in the turkey tenderloin pieces and sprinkle with some salt and pepper. Saute for 5-7 minutes until the pieces are cooked through to an internal temperature of 165 degrees and no longer pink inside. Remove them and set aside on a plate.
  • Step 3

    To the same skillet, add the remaining 1 tbsp sesame oil. Add the carrots, peppers, broccoli, onion, and cashews. Saute for 4-5 minutes until the veggies are crisp tender.
  • Step 4

    Add the chicken back into the pan and pour the orange stir-fry sauce over top. Stir to combine for 1-2 minutes over medium heat. The sauce should bubble and thicken as you stir. Season with salt and pepper to taste.
  • Step 5

    Serve the turkey stir fry over jasmine rice topped with green onions and sesame seeds. Enjoy!
