One Skillet Turkey Parmesan

Ingredients

  • 1 lb turkey cutlets
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup shredded parmesan cheese
  • 1/2 cup Italian breadcrumbs
  • 3 tbsp olive oil
  • 2 tsp garlic, minced
  • 2 cups marinara sauce
  • 5-6 thin slices of fresh mozzarella
  • Freshly chopped basil for topping
  • Extra parmesan for topping

  • Step 1

    Preheat the oven to broil.
  • Step 2

    Remove the turkey cutlets from the packaging and pat dry with paper towels.
  • Step 3

    In a large mixing bowl or shallow plate combine the shredded parmesan cheese, breadcrumbs, salt, pepper, and garlic powder.
  • Step 4

    Rub each cutlet with olive oil on each side.
  • Step 5

    Take each turkey cutlet and press both sides into the breadcrumb mixture and set aside on a plate. Repeat for all turkey cutlets.
  • Step 6

    Heat a large skillet with the remaining 1 tbsp olive oil over medium high heat.
  • Step 7

    Add in the turkey cutlets and cook for 2 minutes on each side, until browned and set aside on a plate.
  • Step 8

    Pour in the marinara sauce around the turkey cutlets and add back in the cutlets.
  • Step 9

    Top each cutlet with a thin slice of fresh mozzarella cheese.
  • Step 10

    Place the skillet in the oven and broil for 4-5 minutes or until the turkey reaches an internal temperature of 165 and the mozzarella is melted and bubbling.
  • Step 11

    Remove and top with parmesan and fresh basil.
