Smashed Turkey Dumplings with Crunchy Slaw

Savory Asian-inspired smashed turkey dumplings by Gillie Houston topped with a crispy cabbage slaw and creamy sriracha mayo.

Ingredients

  • 1 pound Shady Brook Farms ground turkey
  • 3 cups coleslaw mix, divided
  • 4 scallions, thinly sliced, whites and greens divided
  • 2 garlic cloves, grated
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce, divided
  • Salt and white pepper to taste
  • 15 wonton wrappers
  • 1 tbsp rice vinegar

For the spicy mayo (optional):

  • 2 tbsp Sriracha hot sauce
  • 2 tbsp mayonnaise
  • 1 tsp water

  • Step 1

    In a large bowl, combine the ground turkey, 1 cup of coleslaw mix, scallion whites, grated garlic, grated ginger, 1 tablespoon of soy sauce, salt, and white pepper. Stir thoroughly until well combined.
  • Step 2

    Using a spoon, scoop up a portion of the meat mixture. Roll the mixture between your hands to form a 1 1/2-inch ball. Repeat with the remainder of the turkey mixture.
  • Step 3

    Place a meatball in the center of a wonton wrapper and press down gently to spread the meat out to the edges of the wrapper in a thin, even layer. Repeat with the remaining wrappers and meatballs.
  • Step 4

    Heat a lightly oiled nonstick pan over medium-high heat. When the pan is hot, add a layer of the smashed dumplings, meat side down, to the pan and press down gently on each with a spatula. Cook for 2 minutes.
  • Step 5

    Flip the dumplings over, add 1 tablespoon of water to the pan, and cover. Steam the dumplings for 1 minute.
  • Step 6

    Remove the smashed dumplings from the pan and cover with foil to keep warm. Repeat this process with the remaining dumplings, cooking in 3-4 batches depending on the size of your pan.
  • Step 7

    While the dumplings are cooking, prepare the slaw topping and spicy mayo. In a small bowl, combine the remaining coleslaw mix, scallion greens, remaining soy sauce, and rice vinegar and stir to combine.
  • Step 8

    In a separate bowl, combine the sriracha, mayonnaise, and water and stir until smooth.
  • Step 9

    Top each smashed dumpling with a heaping spoonful of the slaw and a drizzle of spicy Mayo. Optionally, serve with soy sauce and chili oil for dipping. Enjoy!
