Taco-Inspired Cheesy Turkey Skillet with Sweet Potatoes & Black Beans

Ingredients
- 1 package Honeysuckle White® Ground Turkey (any lean point)
- 3-4 tbsp. olive oil, divided
- 1 (1 oz.) packet taco seasoning, divided
- 1 yellow onion, diced
- 1 bell pepper, diced
- 1 sweet potato, diced into ½-inch cubes
- 1 (14 oz.) can black beans, drained & rinsed
- 8 oz. pepper jack or cheese of choice, shredded

Step 1
Preheat the oven to 350°F. -
Step 2
Brown the turkey: Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium-high heat. Once hot, add Honeysuckle White® Lean Ground Turkey. Reserve 1 tablespoon of taco seasoning for the veggies, then use the rest to season the turkey. Using a wooden spoon to break the ground turkey into fine crumbles as it cooks, cook 5-6 minutes, or until cooked through. Transfer to a plate. -
Step 3
Soften the veggies: To the same skillet used to brown the turkey, add the remaining olive oil. Once hot, add the onion, bell pepper and sweet potato. Season with the reserved 1 tablespoon of taco seasoning & cook 6-8 minutes until the sweet potatoes are fork-tender. -
Step 4
Assemble the ground turkey skillet & bake: Add the browned turkey & black beans to the skillet with the softened veggies. Stir to combine well. Sprinkle the cheese over top. Transfer to the oven and bake 8-10 minutes, or until the cheese is melted. Serve immediately. Enjoy!
