Thanksgiving Leftover Casserole

- 4 cups leftover Fresh or Frozen Whole Turkey Breast, chopped into ¼ inch pieces
- 3 cups mashed potatoes
- 2 cups thick shredded sharp cheddar cheese, separated
- 1 can cranberry sauce
- ¼ cup craisins
- 3 cups prepared stuffing
- 2 cups cooked delicata squash (substitute in butternut squash)
- 1 cup green beans
- 2 cups spinach
Step 1Preheat the oven to 375°F.
Step 2In a 9x13 baking dish, layer mashed potatoes, cranberry sauce, squash, spinach, green beans, 2 cups of the prepared stuffing, ½ the cheddar cheese, and then add the chopped turkey.
Step 3Finish topping the casserole by crumbling the last cup of stuffing over the turkey and top with remaining cheese.
Step 4Bake until the stuffing topping is browned and crispy on top and the cheese is melted, about 15 minutes.
