Grilled Sausage & Veggie Pasta Salad with Smoked Mozzarella

But, if you’re looking to switch things up from the typical mayo-based options, consider trying this grilled turkey sausage pasta salad with summer veggies and smoked mozzarella. With tons of flavor, this dish is perfect for any occasion – whether it’s a family gathering or a quick weeknight dinner. - 1 package Sweet Italian Turkey Sausage
- 12 oz. box of tri-color rotini pasta
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow zucchini
- 1 green zucchini
- 2 ears of corn
- 1 yellow onion
- 8 oz. smoked mozzarella cheese
- Juice of 2 lemons
- Zest of 2 lemons
- 1/2 cup olive oil
- 2 tsp. salt
- 1 tbsp. dry dill
- 4-5 fresh basil leaves, sliced
- ¼ cup cilantro, chopped
Step 1Prepare the pasta according to the package instructions.
Step 2While the water is boiling, prepare the dressing by whisking together the lemon juice, lemon zest, olive oil, salt, dill, basil, and cilantro. Set aside.
Step 3Once the pasta is finished, drain and place in a large bowl to cool down.
Step 4Preheat your grill to medium high heat.
Step 5Prep the vegetables by cutting the peppers, zucchini and onion in half.
Step 6Drizzle the bell peppers, zucchini, onion, and corn with olive oil and place on the grill along with the Sweet Italian Turkey Sausage.
Step 7Cook for 4-5 minutes on each side and remove the veggies.
Step 8Continue to cook the turkey sausage until the internal temperature reaches 165°F.
Step 9Once everything is finished cooking, chop the veggies and slice the cooked turkey sausage.
Step 10Tear the mozzarella cheese into small pieces.
Step 11Add all of the grilled vegetables, sliced sausage, mozzarella, and dressing to the pasta in large mixing bowl and toss well to combine.
Step 12Top with fresh basil and enjoy.
