Grilled Turkey Tenderloin with Mushroom Sauce

- 6 strips Hardwood Smoked Turkey Bacon
- 2 tablespoons olive oil
- 1/2 cup yellow onions, thinly sliced
- 1/8 cup fresh mushrooms, thinly sliced
- 1/4 cup, 1-ounce shredded mozzarella cheese

Step 1Preheat charcoal or gas grill.
Step 2Heat oil in a large nonstick skillet over medium-high heat.
Step 3Cook onion and mushroom until softened, about 5 minutes.
Step 4Wrap each tenderloin with 3 strips of bacon; secure with toothpick.
Step 5Grill turkey for 5 minutes on each side.
Step 6Cover and grill for 10 more minutes or until no longer pink and internal temperature reaches 165°F.
Step 7Remove turkey; top with onions, mushrooms and cheese.
Step 8Garnish with parsley.
