Lemon, Garlic and Herb Butter Rubbed Smoked Turkey

Ingredients
- 1 Fresh Young Turkey
- 2 sticks unsalted butter (room temperature)
- 1 Tbsp. dry rubbed sage
- 1/4 cup fresh squeezed lemon juice
- 1 Tbsp. lemon zest
- 1 Tbsp. dry thyme, rough chopped
- 4 garlic cloves, fine mince
- 2 tsp. Kosher salt
- 1 tsp. ground black pepper

Step 1
One day prior, remove whole turkey from the refrigerator. Remove from package and pat dry with paper towels. Can also prepare lemon garlic butter. -
Step 2
To prepare flavored butter, place room temperature butter into a mixing bowl. Add the remaining ingredients and blend together. -
Step 3
Gently pull the skin from the breast portion of the turkey. Take a third of the butter and rub it over the breasts underneath the skin. Take another third and rub over the entire whole turkey. -
Step 4
Place back into the refrigerator covered and let sit overnight. -
Step 5
Preheat the smoker to 250°F. Remove turkey from the refrigerator and allow to sit for 20 minutes. -
Step 6
Place turkey on smoker. Melt the remaining Lemon garlic herb butter. Approximately every hour, baste the turkey breast with the melted butter. -
Step 7
Continue to baste every hour until the turkey breast reaches a minimum internal temperature of 165°F (approximately 7 hours), making sure to insert the thermometer in the thickest portion of the breast. -
Step 8
Allow turkey to rest for 10 minutes then carve the turkey. Place on a large platter and serve immediately.
