Turkey Sausage Peppers & Onions with Creamy Polenta

Ingredients
- 1 cup medium or coarse polenta
- 1/4 teaspoon dried thyme
- Freshly ground black pepper
- Cooking spray
- 2 tablespoons extra-virgin olive oil, divided
- 1 cup shredded fontina cheese
- 4 Hot Italian Sausages
- 1 large white or yellow onion, thinly sliced
- 2 medium green peppers, seeded and cut into 1/2-inch wide strips
- 2 medium red peppers, seeded and cut into 1/2-inch wide strips
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- Grated Parmesan cheese

Step 1
Cook polenta according to package instructions. -
Step 2
When polenta is cooked, take it off the heat and add thyme, pepper, fontina and olive oil, and stir until melted and very creamy; keep warm. -
Step 3
Heat a large, preferably nonstick, skillet and coat with cooking spray. -
Step 4
Place the sausages in skillet and cook over medium-high heat, until brown on each side, about 5 minutes per side, then add 1/4 cup of water and cover, turning heat to medium-low. Cook for another 5 minutes. -
Step 5
Take sausages out of pan and place on a cutting board to cool. When cool, cut sausages into 1/2-inch diagonal slices. -
Step 6
Pour liquid out of the skillet, then add the remaining tablespoon of olive oil, onions and peppers; cook over medium-high heat until softened, about 7 minutes. -
Step 7
Add the sliced sausages and garlic to the pan; stir and cook for 2 minutes. -
Step 8
Deglaze the pan with wine and simmer until liquid is reduced to just a few tablespoons. -
Step 9
Spoon polenta onto plates, top with the sausage mixture, sprinkle with Parmesan cheese.
