Turkey Sausage Peppers & Onions with Creamy Polenta

- 1 cup medium or coarse polenta
- 1/4 teaspoon dried thyme
- Freshly ground black pepper
- Cooking spray
- 2 tablespoons extra-virgin olive oil, divided
- 1 cup shredded fontina cheese
- 4 Hot Italian Sausages
- 1 large white or yellow onion, thinly sliced
- 2 medium green peppers, seeded and cut into 1/2-inch wide strips
- 2 medium red peppers, seeded and cut into 1/2-inch wide strips
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- Grated Parmesan cheese

Step 1Cook polenta according to package instructions.
Step 2When polenta is cooked, take it off the heat and add thyme, pepper, fontina and olive oil, and stir until melted and very creamy; keep warm.
Step 3Heat a large, preferably nonstick, skillet and coat with cooking spray.
Step 4Place the sausages in skillet and cook over medium-high heat, until brown on each side, about 5 minutes per side, then add 1/4 cup of water and cover, turning heat to medium-low. Cook for another 5 minutes.
Step 5Take sausages out of pan and place on a cutting board to cool. When cool, cut sausages into 1/2-inch diagonal slices.
Step 6Pour liquid out of the skillet, then add the remaining tablespoon of olive oil, onions and peppers; cook over medium-high heat until softened, about 7 minutes.
Step 7Add the sliced sausages and garlic to the pan; stir and cook for 2 minutes.
Step 8Deglaze the pan with wine and simmer until liquid is reduced to just a few tablespoons.
Step 9Spoon polenta onto plates, top with the sausage mixture, sprinkle with Parmesan cheese.
