Smoked Sweet Potatoes

- 4 lbs. sweet potatoes- cut in half lengthwise
- ½ cup unsalted butter
- ½ cup honey
- ½ cup heavy cream
- ½ tsp. Kosher salt

Step 1
Preheat smoker to 250°F. Wash the sweet potatoes. -
Step 2
Spray the smoker grates with non-stick spray and place sweet potatoes on grates. Cook sweet potatoes approximately 1 hour, just enough to get some smoke on them. -
Step 3
Preheat oven to 350°F. When the sweet potatoes have smoked for an hour, place on a sheet pan and into the oven. Cook until they reach a minimum internal temperature of 205°F, approximately 30 minutes. -
Step 4
While the sweet potatoes are cooking, place the remaining ingredients into a small sauce pan and cook on medium heat until the butter is melted and the cream/honey are warm, approximately 5 minutes. Set aside until the sweet potatoes are done. -
Step 5
Remove Sweet Potatoes from oven. Remove skin and place in a mixing bowl. -
Step 6
Add the warm cream/honey to the mixing bowl and mash the sweet potatoes until smooth. Taste and adjust seasoning as needed. -
Step 7
Place into serving bowl, serve immediately.
