Turkey, Black Bean, Avocado Grilled Quesadillas

Ingredients
- 1 package Ground Turkey (any lean point)
- 8 small flour tortillas
- 2 cups shredded sharp cheddar cheese
- 2 avocados, diced
- 14 oz. can black beans, rinsed and drained
- 1 packet taco seasoning
- 1 green bell pepper, diced
- 3 green onions, chopped
- 2 tbsp. olive oil, divided in half
- Sour cream, for topping
- Cilantro, chopped for garnish

Step 1
Preheat a cast iron skillet on the grill to medium high heat. -
Step 2
Add 1 tbsp. of olive oil and sauté the green peppers for 2-3 minutes, stirring occasionally. -
Step 3
Add the Ground Turkey to the cast iron skillet and continue to cook for 4-5 minutes. -
Step 4
Sprinkle on the taco seasoning and continue cooking until the turkey is no longer pink, about 5-7 minutes until the internal temperature reaches 165°F. -
Step 5
To the skillet, add in the black beans and diced green onion and stir well. Set aside. -
Step 6
To assemble the quesadillas, brush one side of the tortillas with the remaining olive oil. -
Step 7
On the side of the tortilla with no oil, layer cheese, the ground turkey mixture, diced avocado, and fold the tortilla in half. -
Step 8
Carefully place the folded tortillas on the grill and cook for 1-2 minutes on each side until the cheese is melted and the quesadilla is browned on both sides. -
Step 9
Repeat with the remaining quesadillas and set aside. -
Step 10
Slice each tortilla into 2 pieces and top with sour cream and cilantro.
