Turkey Taco-Stuffed Sweet Potatoes
Take your taco night to the next level with these delicious and filling Taco Stuffed Sweet Potatoes. A tender sweet potato stuffed with turkey taco meat and topped with diced tomatoes, diced onions and drizzled with a creamy sour cream sauce. Garnished with cilantro and sliced jalapeños and enjoy!

- 2 lbs. 85% Lean / 15% Fat Ground Turkey (or use whatever lean point you prefer!)
- ½ yellow onion, sliced
- 3 garlic cloves minced
- 1 tbsp. olive oil
- 1 ¼ cup tomato sauce
- 2 tbsp. chili powder
- 2 ½ tsp. cumin
- 1 tsp. paprika
- 1 tsp. oregano
- 1 tsp. salt more or less to taste
- ½ tsp. pepper
- 1 tsp. garlic powder
- ½ tsp. onion powder
- ⅓ cup chopped red onions
- ⅓ cup chopped tomatoes
- ⅓ cup guacamole
- Sour cream (regular or dairy free)
- ½ lime, juiced
- Cilantro and jalapeños slices for garnish
Step 1To make the turkey taco meat, heat a skillet over medium heat, along with a tbsp. of olive oil. Add in the onions and garlic and saute for 2 minutes.
Step 2Add the Ground Turkey to the skillet and brown for about 8-9 minutes or until meat is cooked through. Drain any excess fat.
Step 3Add the tomato sauce along with taco seasoning to the ground turkey. Allow to simmer on low heat for about 3 minutes.
Step 4To make the sweet potatoes in the oven, preheat oven to 400°F. Line a large baking sheet with parchment paper or foil. Set aside. Wash and dry sweet potatoes. Using a fork, poke several holes in around each potato. Cover each sweet potatoes with olive oil and coarse sea salt. Gently rub and make sure each potato is coated. Place the potatoes on the prepared baking sheet and bake for 45-50 minutes or until it is soft to the touch.
Step 5To make the sweet potatoes in a microwave, using a fork, poke several holes in each potato and wrap in a paper towel. Cook each potato 4-6 minutes.
Step 6In a small bowl add in the sour cream and lime juice. Mix until combined.
Step 7Cut a slit down the middle of each sweet potato and stuff with the prepared taco meat. Top each one with chopped tomatoes, chopped onions, and guacamole. Drizzle with the sour cream and lime sauce. Garnish with cilantro and jalapeño slices.
