Basil Pesto Stuffed Turkey Tenderloin

Basil Pesto Stuffed Seared Turkey Tenderloin topped with balsamic marinated cherry tomatoes. A dinner that only looks fancy! Homemade basil pesto stuffed inside a juicy turkey tenderloin all topped with delicious and bright balsamic vinaigrette marinated cherry tomatoes.

Ingredients

  • 1 turkey tenderloin
  • 2 cups loosely packed basil leaves
  • ¼ cup pine nuts or substitute walnuts
  • 1 clove of garlic
  • 1 tbsp red wine vinegar
  • ½ cup olive oil
  • ¼ cup parmesan cheese
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups cherry tomatoes
  • ¼ cup balsamic vinegar
  • 1 tbsp Italian seasoning
  • ⅓ cup olive oil
  • Kitchen twine (optional but it will help hold our turkey tenderloin together!) You could use toothpicks instead
  • 1 tbsp olive oil (for cooking in the skillet)

  • Step 1

    First, prepare the pesto by combining the basil, nuts, garlic, vinegar, and parmesan cheese in a blender cup or food processor.

    Pulse until it starts to become finely chopped.
  • Step 3

    Then blend and slowly stream in the olive oil until smooth (or if using a blender cup just add the olive oil and blend)

    Set aside and prepare the turkey tenderloin.
  • Step 5

    Butterfly the tenderloin by slicing into it lengthwise but not all the way through. Open it up to create your “butterfly”
  • Step 6

    Season both sides of the turkey with salt and pepper.
  • Step 7

    Add the pesto to the center of the turkey and tightly roll
  • Step 8

    Secure the turkey all together using kitchen twine or toothpicks.
  • Step 9

    Heat 1 tbsp of olive oil in an oven safe skillet over medium high heat and sear all sides of the turkey tenderloin. Start with the seam side of the turkey tenderloin facing down.
  • Step 10

    Once all sides are browned, put the tenderloin into a 350 degree oven for 15-20 minutes until it reaches an internal temperature of 165.
  • Step 11

    While that bakes, in a small mixing bowl combine diced cherry tomatoes, balsamic vinegar, italian seasoning, olive oil and a pinch of salt and pepper. Let this marinate until the turkey is done.
  • Step 12

    Remove the turkey and top with our marinated cherry tomatoes.
  • Step 13

    Slice and serve!
